Johan Olsson

Bos Taurus Veterinary Consultants AB is run by Johan Olsson, a licensed veterinarian, lecturer and consultant with extensive experience in animal welfare, food safety and slaughter.

Johan has previously worked as an official veterinarian at slaughterhouses and as a county veterinarian. In both roles, animal welfare and food safety were central areas of work. He was also the lead author of the national guidelines for animal welfare and standard operating procedures at slaughterhouses.

We arrange courses for certificates of competence for the slaughter of reindeer, cattle, bison, pigs, sheep/lamb, broilers and hens. We also provide training and examination for certificates of competence for animal transport, covering cattle, horses, pigs, sheep and poultry.

For KRAV-certified slaughterhouses we provide external advisory services focused on animal welfare, in line with KRAV's requirement for recurring advisory visits. For slaughterhouses that want to develop their animal welfare work, we support the drafting, review and improvement of standard operating procedures for animal welfare at slaughter.

In addition to courses and consulting in animal welfare during transport and slaughter, we also offer support in food safety, self-monitoring programs and HACCP.

Certificate of competence — animal transport

Transporting cattle, sheep, goats, pigs, poultry or horses in connection with an economic activity requires a certificate of competence under Council Regulation (EC) No 1/2005. To obtain the certificate you must complete training covering the relevant species and pass an examination.

During the training you learn the legal requirements for animal transport, how animals should be handled, how to recognize signs of stress and poor welfare, and how your driving affects the animals during transport.

Bos Taurus Veterinary Consultants AB provides training and examination for certificates of competence for the transport of cattle, horses, pigs and sheep, as well as poultry.

Certificate of competence — slaughter

If you handle live animals at a slaughterhouse — receiving animals, handling animals in the lairage, moving animals, or stunning and bleeding animals — you need a certificate of competence under Council Regulation (EC) No 1099/2009. Before you can apply for the certificate from the Swedish Board of Agriculture you must complete training and pass an examination.

Bos Taurus Veterinary Consultants AB is approved by the Swedish Board of Agriculture to arrange courses for certificates of competence for the slaughter of reindeer, cattle, bison, pigs, sheep/lamb, broilers and hens.

During the training you learn about animal physiology, the animals' capacity to experience pain and stress, animal behavior, and the legal requirements for how animals must be handled.

Teaching is delivered through interactive distance lectures — self-assessments between modules, reading assignments and short presentations by the participants. Participants also observe experienced certified operators at the slaughterhouse.

KRAV advisory services

KRAV-certified slaughterhouses must engage an external adviser focused on animal welfare — before entering certification and thereafter at least every three years, in the event of a high or increasing frequency of fresh injuries, during major rebuilding or new construction of unloading facilities, drive alleys, lairage or stunning areas, and whenever there are other indications of recurring animal welfare problems.

Our advisory services cover the entire chain — from unloading and lairage to handling, restraint, stunning and killing — and include every species slaughtered at the establishment. Together we review and follow up the slaughterhouse's standard operating procedures, identify critical points and propose concrete corrective actions.

After the visit you receive a report that the animal welfare officer can use as a tool in the slaughterhouse's self-monitoring program to systematically improve animal welfare.

We also help develop the self-monitoring program that the animal welfare officer at each slaughter establishment is required to put in place.

Standard operating procedures for animal welfare at slaughterhouses

All slaughterhouses must establish standard operating procedures for the handling of live animals. The procedures must cover all operations: handling, lairage, restraint, stunning and bleeding.

When facilities are rebuilt, or if additional species are to be slaughtered, the procedures need to be updated. Best practice is to review and evaluate the procedures continuously in order to improve animal welfare step by step.

Food safety

Food business operators

Food business operators — slaughterhouses, grocery stores, restaurants and others — are required to have systems in place that ensure safe food. This covers Good Hygiene Practices (GHP), Good Manufacturing Practices (GMP), traceability, labeling and working according to the principles of Hazard Analysis and Critical Control Points (HACCP).

Bos Taurus Veterinary Consultants helps companies implement and develop food safety management systems, including prerequisite programs and self-monitoring programs.

Competent authorities

Under Article 6 of Regulation (EU) 2017/625, competent authorities carrying out official controls on food must perform internal audits or have audits carried out on them, and take appropriate measures based on the results.

We have broad experience of audits in official food control and can assist authorities both with conducting internal audits and with drawing up corrective action plans.
